WSU Extension class on preserving game, fish

Vancouver — Learn how to preserve wild game and fish at a workshop presented by Washington State University Extension from 6 to 8 p.m. June 22 at the Heritage Farm, 1919 N.E. 78th St. Cost is $12. Preregistration is required.

Learn how to safely make jerky, a brief overview of sausage, how to smoke your fish and the difference in canning it over nonsmoked fish, pressure-canning and the best methods and packaging for freezing your game and fish. The course includes recipes. Pressure-canner gauge testing will be available for $5.
